For the mozzarella tofu, preheat the oven to 200 degrees. Cut the tofu into 1 cm thick slices and spread some olive oil in a baking dish.
Place the tofu on top of each other and season with salt and pepper. Cut the tomatoes into slices and spread them on the tofu. Cut the leeks into thin rings and spread them on the tomatoes.
Sprinkle with salt and all spices very well. Slice the mozzarella and spread on the leeks.
Season again with salt and pepper. Bake for about 30 minutes until the cheese is brown.
