For the crème brûlée, scrape out the vanilla pod and mix the vanilla pulp well with a little sugar.

Mix the whipped cream, milk, the vanilla sugar mixture and the remaining sugar and stir until the sugar has dissolved. Add yolks and mix briefly with a hand blender. Let mixture stand overnight.

Mix mixture again so that the vanilla is well distributed. Add gelatine according to instructions. Preheat oven to 140°C. Pour mixture into ramekins and place on a baking sheet in the preheated oven.

Pour boiling water on the baking tray until the water level reaches ¾ of the height of the ramekins. Allow to set for 45 minutes. If the cream bubbles, the temperature should be reduced. After 45 minutes, the cream should be somewhat firm. Allow to cool.

Just before serving, sprinkle the crème brûlée thickly with granulated sugar and caramelize the with a gas burner to create a crisp surface.
