For the slaw with pineapple and leeks, first clean the white cabbage, cut into quarters, rinse and drain. Cut out the stem. Cut cabbage into small pieces.
Let the pineapple pieces drain well.
Clean leeks, rinse thoroughly under cold water, drain. Cut the green leaves into small pieces. Cut leeks into fine rings. Add to cabbage with pineapple chunks, mix.
For the marinade, stir oil and lemon juice in a baking bowl. Season with sugar, pepper, salt and pineapple juice. Pour over the leaf lettuce.
Mix. Let coleslaw sit with lid on for 30 minutes.
Rinse and dry lettuce leaves and parsley.
Spread out bowl with lettuce leaves. Put coleslaw in it. Chop parsley and sprinkle over the dressed slaw with pineapple and leeks.
