Peel the mangos with a peeler, cut the flesh in thin slices from the stone, rinse and clean the strawberries, cut the chili peppers in half lengthwise and remove the seeds and peel the ginger. Dice all ingredients very finely. Peel the onion, also dice very finely, blanch briefly, rinse and drain. 2.

Put all the prepared ingredients in a sufficiently large bowl. Grate the lemon peel, squeeze the lemon. Mix the zest and one to two tablespoons of juice, vinegar, a good pinch of sugar and cayenne pepper with the diced ingredients. Pluck the lemon balm leaves from the stems, chop and fold into the fruit. Serve the chutney with the roast pork (see recipe Crispy Roast Pork).
