Peel the kohlrabi. First slice, then dice. 2.

Bring the clear soup to the boil, add the kohlrabi cubes and simmer for 10 min.

Remove the kohlrabi cubes with a skimmer. 4.

Peel the carrots, cut them into slices and simmer them in the clear soup for 10 minutes, remove them.

5. 2/3 of the kohlrabi cubes repeatedly in the clear soup give and with the cutting rod of the mixer in it grind.

Add remaining kohlrabi cubes and carrot slices to soup, season with salt and pepper.

Mix the egg yolks with the whipped cream and stir into the hot, but no longer boiling soup.

8. chop parsley and sprinkle on top before serving.

As a menu suggestion:

Entrée: kohlrabi soup

Main course: Spinach gratin with ham crust.

Dessert: Peach halves with whipped cream and raspberry puree
