Fry ham cubes and onions in hot oil – add gherkins and mixed mushrooms, toss well, then season with pepper and thicken with gravy. Leave to cool. Season butterfly steaks with salt and pepper, spread with mustard and cover with ham slices. The cooled filling on the steaks form, beat together, turn in breadcrumbs, flour, egg on the other side and finish baking in the frying pan. Garnish with cranberries, lemon slices, butter sauce and parsley.
Tip: Always use an aromatic ham, it will add a wonderful touch to your dish!
