For the Schmankerlteller first knock Schnitzerl and bread them, season turkey steaks according to taste (I mixed a barbecue spice with oil and coated the steaks with it). Season the medallions with salt and pepper. Trim the green beans, if they are fresh, and blanch them in lightly salted boiling water until al dente (cook briefly). Meanwhile, cut bacon into small strips. Fry the bacon briefly and then add the green beans and fry them as well. Boil the potatoes. Place 2 pans with oil – one with more oil for the cutlets and in the other only a little. First, sear the medallions, then wrap them in aluminum foil and put them in the preheated oven at 100°C.
