False Salami

For the fake salami, cut the dates and figs into very small pieces or chop them finely. Finely grate the cooking chocolate.

In a baking bowl, mix the chocolate, figs, dates, walnuts, hazelnuts, almond kernels and rum until well combined. Beat the egg whites until stiff peaks form. Form a roll of about 4 cm ø from the mixture.

Roll the roll in sifted powdered sugar until a not too narrow layer has formed all around. Carefully wrap the roll in parchment paper. Let rest in a cool place for at least five days.

Then cut into slices 1 cm thick and serve the fake salami.
