Wild Garlic Sandwiches with Asparagus Spears

Preparation : 25 min

Peel the white asparagus spears from the head down, for the green asparagus spears peel only the lower third. Cook in water with a pinch of sugar, salt and a few drops of oil until al dente. Cool and drain well.

Blanch the tomatoes, remove the skin, remove the seeds, cut the fillets. Cut cress into small pieces, remove peel from onion and cut into rings.

Clean and coarsely chop wild garlic. Finely grind with parmesan, pine nuts and canola oil. Thread the olives onto wooden skewers.

Toast slices of toast on one side.

Preparation : about 15 min

Spread the toast slice on untoasted side with the wild garlic peste, place asparagus spears on top, spread with cream cheese, brush with pesto.

Place slices of roast beef, spread with pesto, top with toamte and radish sprouts.

Spread second slice of toast with pesto, cover sandwiches, spread pesto on top and sprinkle cress.

Spread onion rings evenly on top, pin olive skewer.
