For the pasta with smoked meat and tarragon, cook the pasta in salted boiling water according to package instructions, strain and set aside.
Cut the smoked meat into small cubes. Coarsely chop tarragon. Peel and finely chop onion and garlic.
Heat lard in a deep pan and sauté onion and garlic until translucent. Add smoked meat and pasta, season with salt and pepper and mix well.
Fold in tarragon and stop frying. Arrange the pasta with the smoked meat and tarragon and serve.
