Mix spoonfuls of whipped cream, chopped mint, brown sugar, juice of one lemon and a dash of brandy and spread evenly on a plate. pull in a few drops of balsamic vinegar with a fork to form a pattern. Remove the skin from the prickly pears, cut them into quarters and marinate them with honey.

Fry them in oil at 180 degrees. Spread the finished sachets evenly on the sauce.
