Grate the onions (1) to crumbs, mix with sugar and cinnamon and put in a plate. Mix well egg, milk, sugar, salt and lemon zest and pour into a second deep plate. One by one, soak 2-3 onion biscuits (2) each in the milk for about 2 minutes, then drain and turn to the other side in the breadcrumb mixture. Bake in a frying pan greased with oil and butter over mild heat until golden brown on both sides. Sprinkle with cinnamon and sugar to taste, or possibly serve with compote. Clean the frying pan with kitchen paper after each baking and grease it again.
