Apples rinse, remove the peel and cut into small cubes. Sprinkle with juice of one lemon and mix well.
Heat the butter in a frying pan, add the apple cubes and honey and cook for 5 minutes until soft, stirring.
Whip the cream, add the cream stiffener. Carefully mix the precooled apple mixture and the almond brittle into the stiff whipped cream.
Fill the mousse into dessert bowls, decorate with more brittle and honey to taste.
