For the steak with fried rice, cook the rice with the water and salt for 20 minutes. Peel and finely dice the onion and chop the bacon.
Cut the beef lung roast into 4 equal pieces. Fry the eggs in a little clarified butter (make an egg dish) and break them into small pieces.
Put them in a covered bowl. Fry the onion in clarified butter and fry the bacon briefly, add to the eggs.
Mix the finished rice well with the eggs, bacon and onions, season with salt and pepper.
Heat some clarified butter in a pan, sear the steaks for 2 minutes on each side, then place in oven at 80 degrees for about 15 minutes, or put a lid on the pan and let rest on the turned off stove.
