For the vegetable rice with fried egg, bring the rice with vegetable stock to the boil in a saucepan and cook over low heat until tender. In the meantime, clean the young onion, wash and cut into rings.

Peel and chop the garlic clove. Score tomatoes crosswise and put into boiling water very briefly, about 1 minute, immediately rinse with cold water and peel off tomato skin.

Cut tomatoes into quarters, remove seeds and cut into small pieces. Heat vegetable oil in a pot. Sauté onion, garlic and vegetables in it, stirring. T

omates and stew covered for 3 – 5 minutes until the vegetables are firm to the bite. Mix the rice with the vegetables in the pot, bring to a boil and season with sea salt, pepper, nutmeg if desired.

Fry the eggs (quantity as desired) with a little butter and season with salt and pepper. Spread the vegetable rice on hot plates. Place fried eggs next to or on top and sprinkle with parsley.
