For the beef fillet steak with mashed potatoes and vegetables, boil the potatoes with skin until done.
Then peel and mash with the milk. Season with salt, pepper, parmesan and nutmeg and keep warm. Wash and chop the vegetables. Preheat the oven to 160 degrees with the rack on the middle shelf.
Salt the fillets and sear them in a coated, very hot pan in canola oil on both sides for 30 seconds each, then place them directly on the rack in the preheated oven and let them cook for 15 minutes. Now sauté the vegetables in a pan with canola oil for about 15 minutes. Season with salt, pepper, the garlic clove. Reheat the mashed potatoes and serve with the steak and vegetables.
