Sear the meat on both sides in hot light butter, season with salt, season with pepper, place in a greased ovenproof dish, top each with a slice of pineapple.
Chop the rind from the cheese. Spread the cheese evenly over the pineapple and bake in the oven at 200 °C on the top shelf for about 20 minutes. Decorate with cranberries before serving.
