First, whisk the eggs with the milk and mix with flour, a pinch of salt and oil to form a dough.

Using a spaetzle strainer, brush into the boiling water and cook for about 3 minutes.

Once the spaetzle float to the surface, strain and drain well.

Toss the spaetzle in about 50 grams of melted butter.

Chop the onion and sauté in the remaining butter. Add the spaetzle and stir through, add the chives and season.

Finally, stir in the grated cheese and serve the cheese spaetzle immediately.
