Separate sweet potatoes from skin and chop into cubes. Peel onions and chop into wedges. Cut bacon into cubes and fry in clarified butter. At the beginning brown the potato cubes in the bacon fat, then add the onions and fry the whole thing for about 20 minutes until golden brown. Finally, season with pepper and – if needed – a little salt.
