Salmon farce:






Instructions:

All ingredients of the salmon farce must be very cooled, the fish perhaps almost frozen. Cut salmon and add to cutter form with vegetable broth powder, a tiny bit of cilantro, a tiny bit of salt and about half of the whipping cream, run the cutter until everything is chopped together. Add whipping cream as needed and meanwhile continue to chop until smooth. Important: everything together must go quickly, only cut as long as necessary. The farce must remain quite thick.

Prepare the zucchini flowers: If there is a small fruit, that is a small zucchini, underneath the flower, score this fruit lengthwise so that it then also cooks quickly. Remove fruit pistils from flower and using a piping bag or a teaspoon, pipe in the farce. Twirl petals a tiny bit at top, wrap in plastic wrap (*) and poach in salted water.

Briefly sauté the chive blossoms in butter, bring the zucchini blossoms to the table with the chive butter and white bread.

(*) Can be prepared up to here quiet a little bit in advance (for example, in the morning for the evening), keep in the refrigerator.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried.
