Instructions:

(*) Makes about 24 pieces For the dough, mix the spinach with the egg yolks, season. Fold in the snow. Spread the mixture on a baking sheet covered with parchment paper to a rectangular shape about one cm thick. Bake on the second rack from the bottom of the oven heated to 200 degrees for about ten minutes.

Roll the sponge loosely on the spot with the paper, cool.

For the filling, mix ricotta, Sbrinz and garlic. Fold in cream, season.

Cut sponge in half lengthwise. Spread filling evenly on both halves, roll up cookies lengthwise. Cut into pieces about 1.5 cm wide, arrange on a platter, garnish.

Our tip: Always use fresh chives if possible!
