For the strawberry sponge roll, first beat the eggs with the water until creamy, slowly add the sugar and vanilla sugar while continuing to beat. Mix cornstarch, flour and baking powder and sift over the cream. Gently fold everything in (do not stir). Pour the dough onto a baking sheet lined with baking parchment and smooth it out. Bake immediately in a preheated oven at 200 °C top and bottom heat for 10-12 minutes until golden brown.

Turn the baked sponge out onto a kitchen towel. Brush the baking parchment paper with water and carefully detach it from the sponge. Loosely replace the paper and roll up the sponge cake with the help of the kitchen towel. let cool.

Whip the whipped cream with the powdered sugar and the cream stiffener until very firm. Clean the strawberries and cut them into small pieces. Now mix the strawberries with the cream. Carefully unroll the cooled roll, spread with the strawberry cream and roll up the strawberry sponge cake roll again.
