Pasta dishes are always a good idea!
Introduction : In the Near East, people eat pizza lahmacun. In the meantime, they are also available here in Arabic or Turkish fast food.
Preparation : Sift the flour into a large enough bowl, add salt. Mix the yeast and sugar with milk and 1/2 liter of lukewarm water until smooth. Work the liquid into the flour with the dough hook of the mixer. Beat the dough heartily with oiled hands and let it rise at room temperature for half an hour with the lid closed. Clean the spring onions, rinse, chop and mince. Peel tomatoes, cut in half, squeeze out seeds and liquid, chop finely. Cut peppers in half lengthwise, remove seeds, rinse.
Pluck parsley leaves, set aside a few for topping, chop both.
Put everything in a suitable bowl with the mince, spices and 2 to 3 tbsp water. Prepare into a smooth mixture. Preheat the oven to 250 °C and line 4 baking sheets with parchment paper or oil them if necessary. Divide the dough into 8 portions and roll each out into thin round patties or press flat if necessary. Spread the minced meat mixture on top. Place 2 pizzas on each baking sheet, drizzle with oil and bake in order in the center of the oven for 10 to 15 minutes. Cut red onions into thin rings, mix with sumac. Cut lemon into eighths.
