Line the wok and equally the lid well with tin foil, preferably in several layers. Smoking flour and tea in the wok form, heat strongly with the lid loosely on until smoke smell.

Season turkey breast lightly with salt, place in a steamer basket or on a cooling rack in the wok form. Cover tightly with the lid.
