Beat the eggs, separate the egg whites from the yolks. Beat the yolks with the powdered sugar, salt and vanilla sugar until creamy. Whip the egg whites until very stiff. Mix the egg yolk mixture with the snow. Sift the flour and aniseed into the mixture and gently fold in.

Grease a baking tray and dust with flour. Using a piping bag, pipe the dough onto the baking sheet as small cookies (or use a teaspoon) and pat them down in a warm place overnight.

The following day, bake in the oven at 160 °C for about 20 minutes until light.

Vanilla egg yolks

Prepare vanilla loaves according to the recipe for aniseed cookies, but instead of aniseed, use the inside of a vanilla bean, which is added to the egg-dusted sugar mixture.

Aniseed cookies/vanilla loaves are a bit tricky and do not always turn out visually well, i.e. sometimes no “foot” wants to settle.
