For the stuffed turkey, prepare the turkey stuffing. To do this, first soak the dried plums in lukewarm water. Then lift them out, drain and chop finely. Finely chop the spring onions as well. Wash the rice several times until the water runs clear, then drain well in a colander. Heat the oil in a frying pan or saucepan and sauté the spring onions until light. Mix in the mince and fry vigorously. Mix in the chopped plums, rice, grated walnuts and pine nuts. Season with salt, pepper, cloves, cinnamon, nutmeg and a dash of lime juice. Remove from heat and let cool briefly. Now season the turkey heavily inside and out with salt and pepper. Stuff with the prepared mixture and sew the opening with kitchen twine. Place the turkey in a buttered or oiled roasting pan, spread some butter flakes on top and roast the turkey in the oven preheated to 220 degrees for 15 minutes. Then reduce heat to about 180 degrees, add some water but not over the turkey and finish roasting the turkey until golden brown (about 3 1/2 hours depending on size). Meanwhile, baste the turkey repeatedly with gravy and add fresh water. (Do not baste turkey with cold water, only hot gravy). Lift out finished roasted turkey and let rest while still warm for about 15 minutes. Then carve and serve with stuffing.
