For the vegetables:

Cut the tofu into strips, season with salt and olive oil and sprinkle with the sesame seeds. Bake in the oven at 200 °C for about 20 minutes until crispy, turning the tofu after 10 minutes.

For the maple-sesame dressing, mix all ingredients together.

For the grilled vegetables, cut peppers in half, remove seeds. Cut zucchini and melanzani into wide strips, cut scallions in half lengthwise.

Brush the vegetables with a little olive oil and grill or pan fry on all sides until tender. Then mix with the dressing and let stand briefly.

Serve the tofu together with the grilled vegetables.
