For the gnocchi with smoked salmon and rocket pesto, boil salted water in a pot and simmer the gnocchi in it for 3-5 minutes until they float on top. For the pesto, dry roast the pine nuts in a pan without adding any fat. Then chop (puree) the arugula with the pine nuts, Parmesan cheese, garlic clove, olive oil and a little salt in a food processor. Cut the smoked salmon into fine strips. Strain the cooked gnocchi, drain and mix with the prepared pesto and the salmon strips. Season again and serve in deep warmed plates.
