For the smoked salmon soup, wash, peel and dice potatoes.
Wash the leeks, cut them roughly together with the onions and sauté them in a pot with olive oil.
Deglaze with a little Noilly Prat (or Martini extra dry) and pour in soup. Add the potatoes and cook until they are soft.
Then puree with a hand blender and add milk. Season with salt and pepper.
Squeeze the two lemons and add the juice to the soup, bring to the boil again briefly.
Coarsely chop the dill and add to the soup. Cut the salmon into coarse pieces, add it and let it steep for a minute or two.
Pour the smoked salmon soup into deep plates and sprinkle with a little dill.
