For the gnocchi:








Instructions:

Soak the lentils in cold water for 12 hours.

Then cook them in a saucepan with fresh water for half an hour.

Sauté the ribs in olive oil. Cook in a pressure cooker with the remaining ingredients for about 20 minutes.

For the gnocchi, boil the potatoes the day before and press them through a potato ricer.

On the day of preparation, mix the potatoes with eggs, butter and wheat semolina.

Depending on the consistency, add the required amount of flour and form gnocchi from the mixture.

Cook in boiling water with salt and olive oil for 3 to 4 minutes (the gnocchi are ready when they all float to the surface of the water).

Mix cooked pork ribs with the lentils and season again. Serve with the gnocchi.
