For a waxy quail egg, bring water to a boil in a large pot. The eggs should have enough space and not bump into each other. Unless the eggs are coming from a very cold refrigerator, they do not need to be pierced. It is best to let the quail eggs sit at room temperature for some time.

Slide the quail eggs into the lightly boiling water and cook for about 2 minutes and 45 seconds until waxy soft. Then quench in ice water or hold under very cold, braising water. Then, using a sharp knife, score the peel and skin and peel carefully.
