Sift the flour into a large enough bowl, make a well in the center and beat the egg into it. In a small baking bowl, stir the yeast in lukewarm water thoroughly.

Add olive oil (1) and salt to the flour form and mix, gradually adding the dissolved yeast. Knead the dough until it is smooth and fluffy. Cover and let rise until double in volume.

Then roll out into a round pancake. Brush a round baking dish with a tiny bit of olive oil, pour in the dough patty, gently spread it apart and press up a tiny bit on the edges.

Prick the dough evenly with a fork. Coat with a mixture of a tiny bit of water, salt and oil (2) and let cook for half an hour.

Remove the skin from the onions, cut them into slices, put them in a frying pan with the oil (3) and sweat over low heat until translucent, season with salt.

Spread the onions evenly on the dough, sprinkle with the plucked thyme leaves and the garlic cut into thin slices. Spread the olives evenly over the top. Cut the anchovy fillets in half lengthwise and place them in between in a ray shape.

Place the pizza on the middle shelf in the oven preheated to 220 °C and bake for about 20 minutes until the edges are browned.
