A great pasta dish for any occasion:

In a large saucepan, bring enough salted water to a boil. Make tortiglioni in it for nine min. Pour into a colander, shake well dry and cool. Clean, rinse and chop the vegetables. Peel garlic and chop finely.

Heat oil in a frying pan. Sauté garlic in it. Add vegetables and steam. Remove from the heat. In a large baking bowl, mix with the cooled pasta. Season to taste with salt and freshly ground pepper.

Divide pasta fredda evenly among deep plates. Sprinkle with Parmesan cheese and bring to the table on the spot.
