Finely chop the onion and garlic, fry in butter and a little oil until golden, remove the pot from heat, stir in the sugar and paprika powder.

Then stir in the scraped pumpkin, put back on the stove top and keep stirring until the juice forms, then turn down the heat, add the spices and simmer for half an hour, in no case pour liquid, because the pumpkin contains enough water!

Whisk some of the cooking water in a cup with the sour cream and flour to thicken the pumpkin.

Finely chop the parsley herbs, tarragon and pumpkin flowers and sprinkle on the prepared pumpkin.
