Preheat the kitchen stove to 125 degrees. Peel the four garlic cloves, cut two in half lengthwise, and crush two with a kitchen knife. Grind the crushed salt, garlic, vinegar and a bit of pepper in a mortar and pestle to a smooth paste. Spread this amount on the steaks and rub firmly into the meat on both sides. In a frying pan, melt the butter with the olive oil at a moderate temperature. When the foam has settled, pour in the garlic halves and the crushed bay spice and roast, stirring throughout, for 1 minute, then remove. Add the steaks to the skillet and roast for 2-3 min on each side.

The steaks should be nicely browned but still pink inside. Keep the steaks warm in the stove. Add the ham slices to the fat in the skillet Form and roast over high heat for 1 to 2 min, turning frequently. Using tongs, place 2 slices of ham on each steak. Pour off fat from roasting pan all together except for a thin layer. Add wine and juice of one lemon and bring to a boil over high heat, stirring in drippings clinging to skillet. Pour the sauce over the steaks, sprinkle with parsley. Cut the lemon into eighths and garnish each unit with lemon wedges. As a side dish, serve roast potatoes arranged exactly around the edge of each serving plate.
