For the lemon cake, beat egg whites until stiff and add half of the sugar.

Beat egg yolks with vanilla sugar, softened butter and the rest of the sugar until foamy. Mix the flour, almonds and baking powder and stir into the egg yolk mixture.

Mix the lemon juice and zest well with the batter. Gently fold the beaten egg whites into the batter.

Butter and crumble a baking pan or muffin tin and fill with the batter.

Bake the lemon cake at 180 degrees hot air for 50 minutes.
