Paratha (Flat Bread) with Vegetable Filling

Mix flour with a pinch of salt and lukewarm water and work into a firm but elastic dough. To do this, knead the dough by hand or food processor for at least 10-15 minutes so that the bread becomes nice and fluffy. Cover and let rest for 1 hour. Meanwhile, for the filling, chop the cooked vegetables very finely, grate the ginger finely and mix both in a bowl with garam masala, chili, a pinch of salt and chopped coriander greens. Now knead the dough again and form into 8 small balls the size of a golf ball. Roll out on a floured work surface into flat discs 10 cm in diameter. Now place some filling mixture on one half of each flat. Fold, carefully roll out a little, brush with ghee and fold again to form a quarter circle. Roll out again carefully. Heat some ghee in a pan. Put the patties in, fry for 1 minute, meanwhile brushing the surface with liquid ghee. Then turn and fry for another half a minute until the patty gets brown spots. Press well with a spatula and add more ghee if necessary. Lift out, keep warm in aluminum foil and bake the remaining loaves in the same way.
