The yellow beets are washed, rubbed with salt or cleaned with a kitchen knife and cooked until almost soft. Next, rinse them with cold water, let them drain, then cut them into narrow slices, which are dressed with salt, vinegar and oil and, if you like, with a little bit of clear sugar.
