For the monkfish fillet in the sesame crust, wash the fish fillets, dry them and then sprinkle them with the juice of one lemon together with the shrimps.

Preheat the oven to 150°C and prepare a tray with baking paper. In the meantime, chop the fennel and celery and chop the walnut kernels.

Heat 1 tablespoon of olive oil in a large pot and sauté the fennel for 2 minutes, then deglaze with white wine and add the celery. Simmer for 5 minutes with the lid closed and on low heat.

Dry the fish carefully and turn it in sesame seeds so that it is well covered with them. Heat a non-stick pan and pour in the sesame oil when the pan is hot. Sear the fish and shrimp on both sides for 2 min and add salt.

Then put the monkfish fillet in the oven for 10 min at 150°C and leave the shrimp in the pan. Now add the raisins and the walnut kernels to the vegetables. Let it simmer for another 10 minutes and the monkfish fillet in sesame crust is ready.
