Cook radicchio in salted water for 10 minutes, rinse, squeeze well and chop. Soak the diced breadcrumbs in the milk, mix with eggs, radicchio, cheese, capers, breadcrumbs, parsley and cornichons in a hand mixer to a paste. Season with pepper, Worcester sauce, salt and a pinch of nutmeg.

Shape into walnut-sized balls, turn in flour to the other side and bake in hot oil until done.
