For the raspberry coconut ice cream, puree the raspberries very finely, then press through a sieve to remove the seeds.

Stir in the lemon juice and zest with the coconut milk. Fold in the coconut flakes. If you like, you can sweeten the ice cream with a little sugar.

Process the mixture in the ice cream maker according to instructions. Decorate with mint and serve.
