Instructions:

Divide the cleaned duck liver into equal pieces and lightly salt them. Dredge in flour, beaten eggs and breadcrumbs and fry in hot oil until they are still pink inside. Take them out and let them drain. Arrange on the prepared onion jam with the caramelized apple slices. For the onion jam, cut the onions into rings and saute in a little oil until soft. Then add salt and pepper. Add sugar, red wine, vinegar and a pinch of ground cloves and simmer until the mixture thickens. For the caramelized apples, peel them, remove the core and cut into even wedges. Sprinkle a buttered small pan with granulated sugar and arrange the apples closely together in it. Put a lid on it and let it caramelize on the stove. Drizzle the lemon juice over them and arrange the slices with the caramelized side up.
