Remove the peel from the butter beet, carrots and garlic clove and cut them into pieces of about one centimeter. Sauté everything in a saucepan with a little vegetable oil, season with salt and cover with water. Add the pork cheeks, cover the pot with a lid and cook at low temperature for about 20 minutes until tender.
Fry the butter with the flour until golden brown, season the vegetables with nutmeg and salt and thicken with half of the flour butter.
Flour patties Sift the flour into a suitable bowl, add salt and a tiny bit of nutmeg. Cut the lovage with a sharp kitchen knife and mix it with the flour. Later, add the egg and the water. When the vegetables are soft, put them all together in a sieve and collect the liquid in a saucepan. Let it boil and with a spoon make small flour patties in the liquid. Reduce the heat and simmer for about eight minutes.
Later, divide the vegetables evenly on plates, place the patties on top and season with pepper. Place the flour patties on the outside and pour the flour butter over them.
