For the olive bread, chop the olives and knead well with the remaining ingredients. Let the dough rise until it has doubled in volume. Knead well again by hand and bake the dough in a raffia bread basket in the oven at 200 °C top-bottom heat for about 30 minutes.

Remove the bread from the basket, place a bowl of water in the oven and finish baking the bread on a baking sheet for another 30 minutes.

After baking, sprinkle the olive bread with a little water and let it cool.
