For the tomato sauce, wash the yellow-fleshed tomatoes and cut out the stalks, quarter the fruit and place in a large pot. Press them together a little. Now put a lid on the pot and bring everything to a boil so that plenty of liquid is formed.

Then remove the lid, clean and chop the tomatoes, dice the onion and add it with the thyme. Simmer on half heat for about 1 hour, stirring occasionally.

Strain through a slotted spoon and return to the washed-out pot. Cook down some more until you get the consistency you want, then add salt and pepper.

Pour the cleaned, dry basil leaves into sterile bottles or jars with the sauce and seal tightly. If worked cleanly and tightened the lid, the sauce will last a few weeks.
