Heat cooking oil, sauté onions and garlic for about 3 minutes until soft. Add sherry, let it boil and season with ketchup, chili sauce or possibly Tabasco sauce and salt, cool with closed lid.

As far as the original recipe, depending on the desired spiciness, you can of course also add dried chili peppers or freshly pressed garlic.
