Pasta dishes are always a good idea!

Break the noodles into smaller pieces by hand. Heat the oil for frying in a wok or large skillet and fry small portions of the noodles until golden brown and puffy. Lift out the noodles with a pan scoop or slotted spoon and drain on paper towels.

After frying, pour off all but 3 tbsp of the oil. Add garlic, scallions and chili and fry for 2 min.

Stir through soy sauce, lime, fish sauce- or possibly juice of a lemon and sugar. Add to wok or possibly pan and cook for 2 min until sugar is dissolved. All noodles repeatedly in the wok form and lightly toss in the sauce mixture.

Garnish the noodles with chopped scallions, thin slices of cucumber and chilies and bring to the table.

Saute chicken with scallions and garlic in step 2. Increase the cooking time by 3 to 4 min to make sure they are really cooked as well.
