Instructions:

For the pancake dough Stir all ingredients well together. Later, bake the pancakes in butter in the classic manner.

For the filling Make a cream with butter, powdered sugar and yolks, then fold in the quark and sour cream. Whip the egg whites with granulated sugar until stiff and fold the whites into the yolk mixture. At the end, soften the raisins in rum, cool and fold in as well.

For the vanilla foam, bring milk, cream and vanilla pulp to a boil. Whip the yolks with sugar over steam and then “pull off the rose” with the vanilla milk (see tip). Whip everything together until creamy just before serving.

Fill the pancakes with the curd mixture, place them in buttered and crumbled molds, brush with egg and bake in the oven at 180 °C for 22 minutes.

Arrange the baked curd pancakes with the vanilla foam on the blood orange fillets.

Tip: Peel off to the rose: When you pull out the whisk, a rose-like formation must rise from the cream.
