Mix eggs, milk, flour, sugar and salt to make a smooth pancake batter and let it rest for 30 min. Strain the peaches through a sieve.
– Stir the batter briefly and heat 1/2 tbsp butter in a frying pan. Bake narrow pancakes with the dough. For each pancake, melt 1 to 2 tsp butter in the frying pan. Spread each pancake thinly with the peach puree, roll up and cut into 3 cm thick slices. Preheat the oven to 200 degrees. Grease an ovenproof dish with butter and place the pancake rolls upright close to each other. Mix the yolks with sugar, cinnamon and whipped cream and pour over the pancakes. Place the pancakes in the oven on the middle shelf and bake for about 20 minutes until the egg-whipped cream topping has set.
