For the simple vegetable soup, wash, clean and dice the vegetables.
Bring water with soup powder to a boil, add vegetables and cook over low heat until tender.
Remove some vegetables and set aside, puree remaining soup with a hand blender.
Season the soup with a little nutmeg and bring to the boil again briefly.
Mix the vegetables set aside back into the soup.
Garnish the simple vegetable soup with some parsley before serving.
